Use 2-4 times more fresh herbs than a recipe calls for. Dry herbs are much more concentrated.
Measure dry herbs and then pinch them into your dish. It brings out the flavor.
This is how I make my pizza sauce. It is really easy and I don't measure anything but I just taste it until I like it. It makes enough for two 14" pizzas.
Pizza Sauce
15 oz. can tomato sauce
oregano
garlic
basil
fennel (opt.)
