Tuesday Thyme: Broccoli-Raisin Salad

This is delicious. Just trust me.

Broccoli-Raisin Salad
serves 6

1/2 large head broccoli, washed and trimmed
1/4 c. chopped onion
1/4 c. raisins
1/4 c. chopped pecans or walnuts (optional)
1/4 pound bacon, fried crisp and crumbled (optional)

Dressing
1/4 c. + 2 T. mayonnaise
1 T. vinegar
1/4 c. sugar

1. Cut broccoli into small florets, peel the stem and cut into 1/2" pieces.
2. Combine broccoli, onions, raisins, nuts, and bacon.
3. In a small separate bowl, make dressing of mayonnaise, vinegar, and sugar.
4. Pour dressing over salad.
5. Refrigerate until ready to serve.
6. Toss before serving.

This can be made ahead of time and refrigerated for hours or even overnight.

  1. my mom makes essentially the same thing, but it's broccoli-CRAISIN salad. ...something to think about. :)

  2. mmmm...I've had this salad before, and it is WAY good. And yeah, I think I had it with craisins. Pretty good. And the "optional" bacon for me is a must!

    BTW, congrats again on being pregnant! That's awesome! Do you realize our due dates are 3 days apart? Crazy, huh?!
